Aroma/nose: Intense, very elegant and attractive. An exuberant bouquet of forest fruits and fruit preserves. Palate: Fresh and velvety at first. Quite fruity, with a fine background of smooth, silky tannins. Aftertaste: Long and involving, lingering on the palate for some time. Ageing: Aged for four years in used oak casks and vats. Bottling: Bottled four years after harvesting – March 2005. Ageing potential: Promises excellent development in the bottle, but also delightful if drunk now. The wine is not filtered, and is liable to form a deposit. Food pairing: Combines well with most full-fat cheeses. Serving suggestions: Open several hours before serving and decant, if possible.
