Alchemist series no.3 – Batch 2008-12-01C. The second version of distiller Lance Winters' superb creation. To get the right balance of some very potent flavours, Lance distilled a base of fresh peppers, then blended in separate infusions and distillations of roasted chipotle, fresh Fresno chiles, habaneros, jalapenos and – new this time – dried pasillas. Custom roasting is by Miles Kline of Berkley's T-Rex Barbecue and by some talented suppliers of C & L Produce of Oakland, good folks.
